Understanding America: The Anatomy of an Exceptional Nation (Peter H. Schuck and James Q. Wilson, editors) – an excellent overview of the different parts of U.S. society, including demographics, crime, and politics.
Predictive Inference (Seymour Geisser) – not really an introductory probability theory book, but an overview of the general philosophies, i.e. frequentist vs. Bayesian. Contains some canonical examples and lots of equations.
